Taco Bubble Bake

Fluffy biscuit pieces, seasoned beef, and melted cheese come together in this Taco Bubble Bake—taco night meets bubbly casserole goodness!

Ingredients 

  • 1 lb ground beef
  • 2 tbs taco seasoning
  • 1 cup water
  • 8 oz tomato sauce
  • 1 can black beans, drained and rinsed
  • 4 oz can green chilis , or jalapeños
  • 1 can corn, drained
  • 1 package biscuits, each cut into 8 peices
  • 2 cups colby jack cheese, or any you prefer
  • Optional toppings: lettuce, tomatoes, guacamole, lime and sour cream

Instructions 

  • Cook the ground beef in a skillet, then add in the taco seasoning and water stir to combine
  • Add in the tomato sauce and bring to simmer
  • Add in beans, green chilis and corn. Stir well and remove from heat.
  • Cut each biscuit into about 6 – 8 pieces
  • In a 9×13 baking dish, spray non stick spray, add in the biscuit pieces and ground beef and mix well, top with cheese.
  • Bake at 375℉ for about 25 – 35 minutes or until biscuits are bubbled up and golden brown.
  • Top with lettuce, tomatoes, guacamole, lime and sour cream

    I’m wondering how this would cook in an Insta-Pot… Actually, Ninja Foodi, which is what I have. Think I am going to try it on air fry mode for the biscuits? I don’t know… going to experiment b/c the heat index is 107 and I am not turning on my oven!
