Teriyaki Chicken Casserole

Ingredients

  • 1 yellow onion, diced

  • 1 red bell pepper, diced

  • 2 heads of broccoli, cut into smaller pieces

  • 3 large carrots, sliced

  • 1 lb cubed chicken breast, cubed

  • 3/4 cup teriyaki sauce (I use the panda express brand) any brand will work

  • Cooked rice for serving

Directions

  • Preheat oven to 350 degrees
  • Spray a 9×13 baking dish with nonstick spray add in all of the ingredients and stir. Bake for 45 minutes or until the chicken is cooked through and the vegetables are tender.
  • Serve over cooked rice and enjoy.
