Tomato Basil Parmesan Orzo

Tomato Basil Parmesan Orzo is a quick side or main dish with tender orzo, sweet tomatoes, fresh basil, and a sprinkle of parmesan.

Ingredients 

  • 12 oz dry orzo pasta
  • 2 tbs olive oil
  • 1 white onion, diced
  • 2 tbs minced garlic
  • ½ tsp pepper
  • ½ tsp salt
  • 14 oz can petite diced tomatoes
  • cup fresh basil, chopped
  • ¾ grated parmesan cheese

Instructions 

  • To a pot of boiling water add the orzo and cook it according to package instructions once tender reserve 1/3 cup of the pasta water and set it to the side. Drain the orzo and set to the side.
  • To a large skillet over medium heat add the oil once hot add the diced onion in let it soften for about 3-4 minutes. Stir in the minced garlic, pepper, and salt. Stir in the drained orzo, diced tomatoes, basil, and parmesan cheese once the cheese has melted stir in the reserved pasta water. Enjoy!
