Tuna Vegetable Wraps

Ingredients 

  • ½ yellow bell pepper, , diced
  • 3 green onions, , sliced
  • 2 ribs of celery, , diced
  • ½ red onion, , diced
  • ½ roma tomato, , diced
  • 1 cup Iceberg lettuce, , sliced
  • 2 5 oz cans tuna, , drained
  • 1 tbsp yellow mustard
  • cup Mayonnaise
  • ½ lemon, , juiced
  • ½ tsp salt
  • ½ tsp pepper
  • 4 medium sized wraps

Instructions 

  • To a medium sized bowl add in all of the ingredients except for the wraps and stir well and fill each wrap with the mixture then roll up into a wrap and slice in half. Enjoy!

    A tasty change-up from “the usual” tuna salad and I’ll make it again. Chopping the lettuce and stirring it in added lots of welcome crunch. For my family’s tastes, I omitted the green onions and went a bit light on the red onion, finely diced. Served on whole wheat bread, with a slice of American cheese, as well as a side of veggies & ranch dip and chips.
