Tuscan Pork Chops

These Tuscan pork chops are pan-seared and simmered in a creamy, garlicky sauce with sun-dried tomatoes and spinach for a flavorful Italian twist.

Ingredients 

  • 4 medium thick pork chops
  • cup all purpose flour
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tbsp olive oil
  • 2 tbsp minced garlic
  • 14 oz can petite diced tomatoes
  • cup balsamic vinegar
  • ¼ cup chicken broth
  • 2 tbsp honey

Instructions 

  • Sprinkle the salt and pepper on both sides of the pork chops, then dip the pork chops in the flour to lightly coat.
  • To a deeper pan on the stove over medium heat add the oil, once the oil is hot add the pork chops to the pan and sear them on each side for 2 minutes (the pork chops don’t need to be cooked through at this point) remove the pork chops to a plate and set to the side.
  • In the same pan the pork chops were cooked in add the minced garlic, diced tomatoes, balsamic vinegar, broth, and honey stir well and bring up to a simmer for 1-2 minutes. Add the pork chops back into the pan and coat in the sauce. Let simmer together for 5-7 minutes and serve.

    Fast and flavorful. This recipe is a keeper. I skipped adding the cheese and (for once… being a super cheese-lover) we did not miss it. In place of the broth I just used water from rinsing out the tomatoes can. Served over cooked egg noodles, with a prepared bag salad on the side.
