
Tuscan Sun-Dried Tomato Chicken
Ingredients
- 3 large chicken breasts
- Salt
- Pepper
- 2 Tbsp minced garlic
- ⅓ cup sun-dried tomatoes
- 15 oz can quartered artichoke hearts, drained
- 1 yellow onion, diced
- 2 cups fresh spinach, chopped
Instructions
- Place chicken in the bottom of a slow cooker. Sprinkle with a dash of salt and pepper, spread the minced garlic over the top of the chicken, and add in the sun-dried tomatoes, artichokes, and onion. Cook on low for 6 hours.
- Add in the spinach and continue to cook for 20 to 30 minutes to wilt down the spinach. Serve and enjoy.
