Tuscan Sun-Dried Tomato Chicken

Creamy and full of rich flavor, this tuscan sun dried tomato chicken is a one-skillet meal with Italian flair.

Ingredients 

  • 3 large chicken breasts
  • Salt
  • Pepper
  • 2 Tbsp minced garlic
  • cup sun-dried tomatoes
  • 15 oz can quartered artichoke hearts, drained
  • 1 yellow onion, diced
  • 2 cups fresh spinach, chopped

Instructions 

  • Place chicken in the bottom of a slow cooker. Sprinkle with a dash of salt and pepper, spread the minced garlic over the top of the chicken, and add in the sun-dried tomatoes, artichokes, and onion. Cook on low for 6 hours.
  • Add in the spinach and continue to cook for 20 to 30 minutes to wilt down the spinach. Serve and enjoy.
