Vegetable Fried Rice

Vegetable Fried Rice turns simple rice and fresh vegetables into a quick, colorful stir-fry with savory seasonings.

Ingredients 

  • 2 tbs olive oil
  • 3 ribs celery, sliced
  • ½ white onion, diced
  • 3 large carrots, sliced
  • 3 eggs
  • 3 cups cooked white rice
  • 4 tbs low sodium soy sauce

Instructions 

  • To a large skillet over medium heat, heat up the oil. Once it is hot, add the vegetables in and saute until soft.
  • Push the vegetables over to one side of the skillet.
  • Crack the 3 eggs in. Season with a dash of salt and pepper and quickly scramble the eggs until cooked.
  • Add in the cooked white rice and soy sauce. Stir everything together and let cook for 3-5 minutes. Enjoy!
