Vegetable Fried Rice
Ingredients
- 2 tbs olive oil
- 3 ribs celery, sliced
- ½ white onion, diced
- 3 large carrots, sliced
- 3 eggs
- 3 cups cooked white rice
- 4 tbs low sodium soy sauce
Instructions
- To a large skillet over medium heat, heat up the oil. Once it is hot, add the vegetables in and saute until soft.
- Push the vegetables over to one side of the skillet.
- Crack the 3 eggs in. Season with a dash of salt and pepper and quickly scramble the eggs until cooked.
- Add in the cooked white rice and soy sauce. Stir everything together and let cook for 3-5 minutes. Enjoy!
