Ingredients
- 8 medium-sized flour tortillas
- 2 tbsp butter
Toppings
- 1 ½ cups mozzarella cheese
- ½ red onion, diced
- 1 ½ cups cherry tomatoes, diced
- 2 cups fresh spinach, chopped
- ½ cup feta cheese crumbles
Instructions
- Inside each tortilla distribute all of the toppings.
- Warm a large skillet on the stove, add the butter, and once melted cook the quesadillas one at a time until the cheese is melty and the tortilla is crisp.

Super yummy, my toddlers enjoyed them too. I excitingly told my husband ” Mediterranean quesadillas? Unheard of!” and he jokingly replied “There’s a reason they’re unheard of…”. Even though he didn’t like the sound of it at first, he liked it and ate any left overs, haha!
