Zesty Italian sausage is cooked with veggies and spices and topped with fluffy, seasoned biscuits for a unique and interesting dish. Italian Sausage Biscuit Casserole is a little like a deconstructed meatball sub in casserole form.

  • Italian sausage
  • yellow onion
  • green bell pepper
  • carrots
  • canned diced tomatoes
  • canned tomato sauce
  • mozzarella cheese
  • salt and pepper
  • canned refrigerated biscuits
  • melted butter
  • garlic salt
  • oregano

How to Make Italian Sausage Biscuit Casserole

Making this casserole is simple and easy.

First, cook the sausage, bell peppers, and carrots in a skillet over medium heat. Break the sausage up using a spatula or my favorite meat chopper (if you don’t have one you need it!) and cook it through. Remove any excess grease from the pan by blotting the pan with a paper towel.

Next, add the diced tomatoes, tomato sauce, cheese, and salt and pepper to the meat mixture and stir. Let that simmer away for five minutes, stirring occasionally.

Prepare a 9×13 baking dish by spraying it with nonstick spray. Pour the casserole mixture into the baking dish and spread it out.

Open the biscuits and peel each biscuit into two to create twice as many biscuits. This will make them quite a bit thinner. Place the biscuits on top of the casserole next to each other, overlapping a bit. Drizzle the butter over the top then sprinkle the garlic salt and oregano on top as well.
Bake for about half an hour, or until the biscuits are all the way cooked through and golden brown on top. Serve and enjoy!

Recipe Notes

  • If you want to half this recipe, you can bake it in an 8×8 pan. Just divide all the ingredients by half, including the biscuits. If you only use half of the biscuits, turn the other half into delicious Cinnamon Roll Biscuits!
  • Use your favorite brand of canned biscuits. I always use Pillsbury Grands because I like the buttery flavor and how light and airy they bake up.
  • Use any other ground meat in place of the Italian sausage. You might just need to add a little extra salt and pepper.

Ingredients 

  • 1 lb Italian sausage
  • 1 yellow onion, , diced
  • 1 green bell pepper, diced (optional)
  • ½ cup carrots, sliced
  • 14.5 oz can diced tomatoes
  • 8 oz can tomato sauce
  • ½ cup mozzarella cheese
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 16.3 oz can refrigerated biscuits
  • 3 tbsp melted butter
  • 1 tsp garlic salt
  • 1 tsp oregano

Instructions 

  • Preheat oven to 375℉.
