These Slow Cooker Beef Tips with Gravy are one of those easy, comforting dinners that practically cook themselves. Tender pieces of beef cook low and slow with onion, seasonings, beef broth, Worcestershire sauce, and pepperoncini until they’re flavorful and fork-tender.

Near the end of cooking, I stir in a simple cornstarch slurry to turn all of those savory juices into a rich gravy. Spoon the beef tips and gravy over mashed potatoes, egg noodles, or rice for an easy family dinner that’s especially good on a chilly night.

How to Make Slow Cooker Beef Tips with Gravy

  1. Add the stew meat, sliced onion, garlic powder, onion powder, thyme, pepperoncini peppers, Worcestershire sauce, beef broth, and bay leaf to your slow cooker.
  2. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
  3. About 40 minutes before serving, remove the bay leaf.
  4. Stir together the cornstarch and cold water until smooth, then pour the slurry into the slow cooker and stir.
  5. Cover and cook on HIGH for another 30–40 minutes, or until the beef is tender and the gravy has thickened.
  6. Serve the beef tips and gravy warm over mashed potatoes, egg noodles, or rice.

Tips for the Best Beef Tips

  • Don’t add the cornstarch directly to the slow cooker. Mixing it with cold water first helps prevent lumps in your gravy.
  • If you’re cooking the beef on LOW, start checking it around the 5-hour mark. Slow cookers can vary quite a bit.
  • Remove the bay leaf before serving.
  • Mashed potatoes are my favorite way to serve this because they soak up all of that savory gravy.

Slow Cooker Stew Meat with Gravy

Ingredients 

  • 1 lbs stew meat
  • 1 sliced onion
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp thyme
  • 4 sliced pepperoncini peppers
  • 1 tbs Worcestershire sauce
  • 1 cups beef broth
  • 1 bay leaf

Cornstarch Slurry

  • 2 tbs cornstarch
  • 2 tbs cold water

Instructions 

  • In the slow cooker, pour in all the ingredients (minus the cornstarch slurry mixture) and set to high for 3 – 4 hours or on low 5 -6 hours.
  • Make the cornstarch slurry by mixing the Cornstarch Slurry together.
  • 40 minutes before the beef tips are cooked remove the bay leaf and stir the cornstarch slurry in.
  • Cook on HIGH for 30-40 minutes or until the beef tips are cooked and the gravy thickens.
  • Serve over mashed potatoes and enjoy.
