easy avocado ranch chicken sandwich

With little to no cooking involved, this creamy chicken salad recipe has all of the delicious tastes of summer all in one bite.

You can dress this sandwich up or down and it will taste amazing.

Ingredients for Avocado Ranch Chicken Salad Sandwiches:

  • Protein: I love keeping this recipe simple by getting a store-bought rotisserie chicken and dicing the chicken breast up
  • Avocado: This may take a little planning since you will need a ripe avocado and then peel and dice it
  • Ranch: I’ll use my favorite brand of store-bought ranch dressing that I normally already have in the fridge
  • Fresh herbs: Using chopped fresh dill adds so much delicious flavor to this chicken salad recipe with only a little effort
  • Seasoning: Just add some salt and black pepper for a little extra kick to the creamy dressing
  • Buns: I like to use hamburger buns, but you can put this on your favorite roll

How to Make Avocado Ranch Chicken Salad Sandwiches:

Prepare the Chicken Salad:

  1. In a medium mixing bowl, combine the diced chicken, avocado, ranch dressing, and fresh dill.
  2. Stir gently to combine to a creamy texture, while being careful not to mash the avocado.

Season and Chill:

  1. Season the chicken mixture with salt and black pepper to taste.
  2. Cover the bowl with aluminum foil and refrigerate for at least 30 minutes to allow the flavors to meld.

Fridge: Once the chicken is mixed together with the dressing ingredients, let it sit in the mixing bowl or move it to an airtight container and store it for 2-3 days. Beyond that, the avocado will start to turn brown from oxidation.

Chicken to use:

When making a classic chicken salad recipe, I like to cheat a bit a get a rotisserie chicken from the grocery store and then remove the chicken breasts, place them on a cutting board, and cut them into small pieces.

But, you can always make the chicken breasts for this simple recipe by boiling them in a pot or in the Instant Pot for a quick and easy way to make the chicken.

Toppings for chicken salad recipes:

  1. Chopped green onions
  2. Chopped red onion
  3. Romaine lettuce
  4. Sunflower seeds
  5. Chopped celery
  6. Crunchy bacon or turkey bacon
  7. Large tomato slices
  8. Favorite dressings like ranch  (yes, more ranch) and bbq sauce, creamy avocado lime dressing

How to serve chicken salad sandwiches:

For the best results, convenience, and budget reasons, I like to serve these on hamburger buns, but you could get tasty croissants, slice them in half, and fill the buttery roll with the chicken bacon ranch salad.

Turn it into a lettuce wrap by getting a large piece of romaine or butter lettuce and serving it that way. Or, keep it super simple, serve it over salad greens with fresh veggies for low carb option.
