Black Beans and Rice

Black beans and rice is a simple, satisfying dish packed with protein, fiber, and bold, savory seasoning.

Ingredients 

  • 1 tbsp olive oil
  • cup onion, diced
  • 1 chicken bouillon cube
  • 1 cup uncooked white rice
  • 2 ⅓ cup chicken broth
  • 10 oz can diced tomatoes with green chilis
  • 15 oz can black beans,, drained and rinsed
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Shredded cheese: optional

Instructions 

  • To a large deeper pan on the stove over medium heat add the oil once hot add in the onion and let cook for 2-3 minutes stirring often.
  • Now add in the uncooked rice, chicken broth, rotel, black beans, and seasonings stir well. Let simmer (stirring occasionally) for 20-25 minutes or until the rice is tender. Top with cheese – optional – and enjoy.

    Thank you so much for this recipe Julia! My family loves it. We keep on hand 1lb portions of frozen rotisserie chicken from Costco, so we thawed one and seasoned it with the same seasonings you list and added that in for extra protein. 10 month old devoured this as well 🙂
