You all know how much I love easy skillet recipes. And today I have a recipe that I think you all will love! Tomatoes, cream cheese, and Italian herbs and spices make this Creamy Chicken Skillet so flavorful and delicious. You can make this easy skillet meal in about 20 minutes. Make this for a busy weeknight meal or a Sunday dinner.

Ingredients for Creamy Chicken Skillet

Is there anything better than a creamy tomato sauce? I’m not convinced that there is! This Creamy Chicken Skillet is so flavorful and rich and delicious. To make this dish, add these ingredients to your shopping list:

  • olive oil
  • chicken breast
  • zucchini
  • yellow onion
  • chicken broth
  • petite diced tomatoes
  • cream cheese
  • salt
  • pepper
  • onion powder
  • garlic powder
  • Italian seasoning
  • dried basil

How to Make Creamy Chicken Skillet

Making this Creamy Chicken Skillet is fast and easy; it only takes a few steps.

First, season each halved chicken breast with salt and pepper. Then add it to a skillet (this is such a high-quality skillet that I use all the time) along with some olive oil and cook for 4 minutes on each side. You can check the internal temperature of the chicken with a meat thermometer. Once it reaches 165, it is done. Set the chicken aside.

Add some more olive oil to the skillet and scrape the flavorful bits off of the bottom of the pan. Then add in the zucchini and onion and cook for a few minutes until they start to soften a bit. Add in the tomatoes, cream cheese, broth, and seasonings. Cover the skillet and let that all simmer together for a few minutes, or until the cream cheese is all melted.

Add the chicken back to the skillet, and serve with egg noodles, mashed potatoes, rice, or cauliflower rice if you want to keep it low carb.

Ingredients 

  • 2 tbsp olive oil
  • 1 lb chicken breast, sliced in half horizontally
  • 1 medium zucchini, cut into half moons
  • 1 yellow onion, diced
  • cup chicken broth
  • 15 oz petite diced tomatoes
  • 3 oz cream cheese, cubed
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp dried basil

Instructions 

  • Season the chicken breasts on each side with a dash of salt and pepper.
  • To a large skillet over medium heat add in 1 tbsp of olive oil. Once hot, add in the chicken and cook for about 4 minutes on each side, or until they are cooked through. Remove the chicken to a separate plate and set to the side. Keep all of the flavorful bits in the skillet.
  • Add in 1 tbsp olive oil along with the zucchini and onion. Cook for 2-3 minutes. Stir in the diced tomatoes, cream cheese, chicken broth, and seasonings. Cover and let simmer for 3-5 minutes, stirring occasionally, until the cream cheese is melted.
  • Place the chicken back in the skillet, cover with the sauce, and serve. Serve with egg noodles, mashed potatoes, rice, or cauliflower rice. Enjoy!

    I made this tonight for dinner after seeing it in one of your youtube videos. I watch them all the time. It was so simple to make and so yummy. My best friend loved it. Only thing I did differently was add a tsp fresh garlic. I will definitely be making this again. Served mine with chicken and vegetable flavored rice.
