Creamy Tomato Pasta

Ingredients 

  • 2 tbs olive oil
  • 1 onion diced
  • 1 tbs minced garlic
  • ¼ cup sun dried tomatoes
  • 2 tbs tomato paste
  • 1 tsp Italian seasoning
  • 3 cups chicken or vegetable broth
  • 1 15 oz can diced tomatoes
  • 12 oz short pasta noodles
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ cup cream cheese cubed
  • ¼ cup parmesan cheese

Instructions 

  • In a large pot add the oil once it's hot add the onion, garlic, and sun dried tomatoes in saute for about 3 minutes on medium heat.
  • Now add in the tomato paste and italian seasoning stir to combine.
  • Add the diced tomatoes, broth, pasta, and salt and pepper in. Simmer covered for 5 minutes (stir frequently) then uncovered for 5 more minutes (stir frequently) until the noodles are cooked.
  • Add the cream cheese and parmesan cheese in, stir to combine. Once the cheese melts it's ready to serve.
