Easy Goulash

This easy goulash is a one-pot, old-school comfort meal with ground beef, pasta, and a savory tomato sauce.

Ingredients 

  • ½ lb sausage
  • ¼ white onion, diced
  • 8 oz elbow pasta
  • 6 oz frozen mixed vegetables
  • 2 bouillon cubes
  • 5 cups water
  • 24 oz pasta sauce
  • 3 oz tomato paste
  • ½ tbsp brown sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp Italian seasoning

Instructions 

  • To a large pot on the stove over medium high heat add in the sausage and onion break the sausage up and cook it through.
  • Remove any excess grease from the pot. Add in the pasta, mixed vegetables, bouillon cubes, water, pasta sauce, tomato paste, and seasonings, stir well. Bring up to a simmer then turn the heat to low let simmer for 12 to 18 minutes, stirring occasionally (so the pasta doesn’t burn) until the pasta is tender if the liquid line gets too low while simmering add 1/2 cup of water in at a time until the pasta is cooked.

    I made this last night, and it was delicious! The only modification I’ll do next time is adding one less cup of water, since mine was still a little soupy after the pasta was cooked. But the flavors were great!

    I tried this recipe and it ended up quite soupy. Not sure where it went wrong, but I don’t know if 5 cups water is a bit too much with the pasta sauce. Just thought I’d mention it. Thanks!
