Ingredients for One Hour Dinner Rolls:

  • Liquid: use will need to use whole milk or whatever you have on hand as well as water
  • Butter: use softened unsalted butter
  • Sugar: use the white sugar from your pantry
  • Salt: you can use either kosher salt or sea salt when making these fluffy rolls
  • Flour: all you will need is all-purpose flour to get the right texture for these hour rolls
  • Yeast: using either rapid-rise yeast or instant yeast should be perfect for getting the best classic dinner rolls

How to make One Hour Dinner Rolls:

Add milk, water, butter, sugar, and salt in a small bowl and heat in the microwave for about 1 minute. Stir well and pour the yeast mixture into the bowl of a stand mixer or large bowl. Whisk in yeast and let sit for 10 minutes.  

With a dough hook attachment, add about 3.5 cups of flour and mix on medium speed. Add in additional flour incrementally until the dough is soft but not sticky. Mix for about 6-8 minutes.

Divide the dough into 15 even pieces and roll into balls. Place the dough balls in a greased 9×13 baking dish.

Cover the tops of the rolls with a clean dish towel and set it in a warm place and let the dough rise for about 20 minutes, or until doubled. While the rolls are still rising, set the oven to 350℉.

Bake for 15 – 18 minutes in the preheated oven. After the rolls are finished baking, brush the tops of the rolls with melted butter.

Let cool for a few minutes before serving. Enjoy!

When making this family favorite dinner roll recipe, I tend to keep it simple by using all-purpose flour. However, you could use bread flour if you have it on hand, but it is not necessary to get delicious dinner rolls.

How to make sure the rolls cook evenly:

If you want to make sure the roll cook evenly, the best option is to use a food scale and weigh the total bread dough and then divide that amount by 15. Then you can break the bread dough into 15 pieces, weighing each one to be sure they are about the same size.

How to roll dinner rolls:

Place the smaller piece of dough in your hand. Flip it over so the dough is on the counter with your hand over top. Then using a little bit of force, move your hand in a small circular motion. 

When you add a little pressure while moving in a circle, it will help pull the ends together underneath. 

Then place the little piece of dough seam side down in the baking dish.

Can you make these ahead?

Absolutely! After baking, you can let the rolls cool completely, put them in an airtight container, and put them in the freezer for up to a month. When you want to serve them, you can pull them out of the freezer a few hours before to let them thaw! 

If you want to heat them up again, you can brush them with a little butter once they’re thawed and throw them in the oven for a few minutes to warm them back up again.

    Ok, the rolls turned out beautiful looking but they were not light and fluffy. I think it was all my problem and this is what I did. Followed all your directions , however; is a whole packet of fast active yeast = to 2 Tbsp? That is what I did. Next, I let it knead in my mixer for probably 23 minutes which is the time my yeast mixture was ready and I started adding the flour. I took pics of my steps. Did I mix too long? I thought I did 9 minutes but once it started mixing up I set the timer and that was approx 9 to 12 minutes. You said, for 6 to 9 minutes. I got 13 balls out but some were bigger than others. I will weigh my total dough next time. I also did not roll on the counter a few times since I let it do that in my mixer with the dough hook. I let them rise 20 minutes. They came close to doubling. Then my oven was tried up with chicken thighs at 400 degrees so I used my microwave convect bake mode and my instructions said to use 325 degrees instead of 350. They baked for approx. 27 minutes. I checked the temperature and they were done at 191 degrees. And they were golden on the top as well as taller and wider than they were from when they rose. So what did I do wrong? This happened with my bread recipe and pizza dough the last time with the fast active yeast. So it wasn’t you. What can I fix to make them light and fluffy?
