
Greek Pasta Salad
Ingredients
Salad filling:
- 16 oz rotini pasta
- 1 english cucumber, chopped
- 2 roma tomatoes, diced
- ½ red onion, diced
- ⅓ cup black olives, sliced
- 6 oz feta cheese
Dressing:
- ½ cup light olive oil
- ⅓ cup red wine vinegar
- 1 lemon, juiced
- 1 tbs minced garlic
- 2 tsp honey
- 1 tsp salt
- ½ tsp pepper
- 1 tsp oregano
Instructions
- In a large pot, boil water and salt and cook pasta according to package instructions. Drain, rinse with cold water, drain again and set aside.
- In a bowl, mix the dressing ingredients well.
- In a large bowl, add the salad filling ingredients in and mix in the dressing until its well combined. Chill for an hour or longer and enjoy!
