Ham Broccoli and Rice Casserole

This ham broccoli and rice casserole is creamy, cheesy, and perfect for using up leftovers in a comforting one-dish dinner.

Ingredients 

  • 2 cups chicken broth
  • 10 oz can cream of chicken soup
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 cup uncooked jasmine rice , OR regular white rice
  • 1 ½ cup shredded cheddar cheese
  • 12 oz frozen bag broccoli, or use fresh
  • 16 oz ham, diced

Instructions 

  • Preheat oven to 375 F.
  • Spray a 9×13 baking dish with nonstick spray.
  • Into the baking dish add the chicken broth, cream of chicken soup and seasonings whisk well to combine the ingredients. Add in the rice, 1/2 cup of cheese, broccoli, and ham stir well.  Cover tightly with foil and bake for 55 minutes.
  • Remove from the oven discard the foil and stir. Sprinkle the remaining cheese on top and bake for an additional 15 minutes or until the rice is tender.

    I could have sworn I made this previously, but I made it last night and so glad. I keep a few pounds of diced ham and bags of broccoli among other veggies in the freezer. Everything else is from the pantry. Anyways, it was quick, delicious and available. Thanks! This recipe will be printed and stuck tp the fridge.
