I love that this potato sausage dinner is easy to make and only needs a few simple ingredients to get an amazing creamy sauce and tender potatoes mixed with the sausage. Making this a delicious potato recipe that is perfect to add to your easy weeknight meals.

Ingredients for Italian Sausage & Potato Skillet:

  • Oil: Add a little olive oil or avocado oil to saute the onions and bell peppers
  • Onion: Use whatever onion you have on hand. I like to use diced yellow onion
  • Pepper: Use either an orange or red bell pepper that has been seeded and diced
  • Protein: Adding ground Italian sausage will give the best flavor to this potato skillet recipe
  • Paste: Tomato paste will help add flavor and thicken up the creamy skillet meal
  • Seasoning: A little simple Italian seasoning, kosher salt, and ground black pepper will be perfect
  • Potatoes: Grab some baby gold potatoes and quarter them to add to the easy meal
  • Broth: Add in either low-sodium vegetable broth or chicken broth to the skillet sausage dinner
  • Cream: Heavy cream adds the perfect amount of richness to the cooked sausage dinner
  • Veggies: Simple baby spinach is a great way to add a vegetable to this simple meal
  • Cheese: Use shredded Parmesan cheese as the perfect addition to add another level of flavor

How to Make Italian Sausage & Potato Skillet:

Saute onion and pepper:

  1. Heat olive oil in a large skillet over medium heat. 
  2. Sauté the chopped onion and bell pepper for 4–5 minutes until softened.

Cook sausage and potatoes:

  1. Add the ground sausage and cook, breaking it apart with a spatula, until browned and fully cooked, about 5-7 minutes.
  2. Stir in the quartered baby potatoes, tomato paste, Italian seasoning, and season with salt and pepper. Cook for 1 minute.

Add broth and cream:

  1. Pour in the broth and heavy cream. 
  2. Cover and simmer for 15–20 minutes, until potatoes are fork-tender.

Add cheese and spinach:

  1. Turn off the heat and stir in the spinach and Parmesan cheese.
  2. Serve hot, optionally with crusty bread or a side salad.

  • 2 tbsp olive oil
  • ½ yellow onion, diced
  • 1 large bell pepper, diced
  • 1 lb ground Italian sausage
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ lb baby gold potatoes, quartered
  • Salt and pepper, to taste
