Microwave Peanut Brittle

Ingredients 

  • 1 cup corn syrup
  • 2 cups raw peanuts
  • 2 cups raw sugar
  • 1 tsp salt
  • 2 tsp vanilla
  • 1 ½ tsp baking soda
  • 2 tbs butter

Instructions 

  • To a large microwave safe bowl add the corn syrup, peanuts, sugar and salt. Stick in the microwave for 4 minutes.
  • Remove from microwave, stir. Cook another 4 minutes.
  • Another time: Remove from microwave, stir. Cook another 4 minutes.
  • Another time: Remove from microwave, stir. Cook another 2 minutes.
  • Now stir in butter and vanilla. Place back in microwave additional 1 minutes.
  • Now stir in baking soda. Stir well as it bubbles.
  • On a sheet pan lined with greased tin foil, pour peanut brittle mix on and set aside for 1 – 1 1/2 hours to harden.
  • Break into smaller pieces and enjoy!
