One-Pot Beef & Cheese Taco Pasta

Ingredients

  • 1 lb ground beef

  • 1 tbs olive oil

  • 1 white onion, diced

  • 1 tbs minced garlic

  • 1 red bell pepper

  • 1 tbs taco seasoning

  • 1 cup salsa

  • 3 1/2 cups chicken broth

  • 8 oz farfalle, or any small pasta

  • 1 can black beans, drained and rinsed

  • 1 cup frozen or fresh corn

  • 2 cups cheddar cheese

  • Optional toppings: cilantro, diced avacado, lime, sour cream, jalapenos

Directions

  • In a large pot with a lid or dutch oven over medium heat, pour in 1 tbs olive oil and add in the onion, bell pepper, and ground beef cook the beef through then remove any access grease.
  • Add the taco seasoning, and garlic stir well.
  • Pour in the broth and salsa of your choice and bring to boil. Add in the pasta and give it a really good stir. Cover and cook on a low simmer until pasta is cooked and the liquid has reduced a good amount. Stir frequently so nothing sticks to the bottom of the pot!
  • Add in the corn and beans and let sit a couple minutes. Stir in cheese and serve hot!

    Tasty recipe. Needed more taco seasoning (or maybe a different brand) and took way longer than expected though. I’d make some tweaks next time for my stove I think.
