One-Pot Tortellini Tomato Soup

Cheesy tortellini, rich tomato broth, and a touch of cream—this One-Pot Tortellini Tomato Soup is comfort food that comes together fast.

Ingredients 

  • 1 white onion, diced
  • 1 tbs minced garlic
  • 1 tsp olive oil
  • ½ tsp dry rosemary
  • 28 oz diced tomatoes
  • 15 oz tomato sauce
  • ½ tsp dried oregano
  • ½ tsp dry basil
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 cups chicken broth
  • ½ cup heavy cream
  • 20 oz frozen three cheese tortellini
  • ½ cup shredded parmesan cheese, plus more for topping

Instructions 

  • In a large pot over medium heat, pour the olive oil once the oil is hot add in the onion, garlic and rosemary. Saute for 5 minutes or until the onion is soft.
  • Add in the diced tomatoes, tomato sauce, broth, oregano, basil, salt and pepper, and heavy cream and give it a really good stir. Bring to a low simmer for 20 minutes covered. Stir frequently.
  • Add in the tortellini and cook an additional 12 – 14 minutes, or until the tortellini is completely cooked. Once finished stir in parmesan cheese.
  • Serve hot and top with extra parmesan cheese.
