
One-Pot Tortellini Tomato Soup
Ingredients
- 1 white onion, diced
- 1 tbs minced garlic
- 1 tsp olive oil
- ½ tsp dry rosemary
- 28 oz diced tomatoes
- 15 oz tomato sauce
- ½ tsp dried oregano
- ½ tsp dry basil
- ½ tsp salt
- ¼ tsp pepper
- 4 cups chicken broth
- ½ cup heavy cream
- 20 oz frozen three cheese tortellini
- ½ cup shredded parmesan cheese, plus more for topping
Instructions
- In a large pot over medium heat, pour the olive oil once the oil is hot add in the onion, garlic and rosemary. Saute for 5 minutes or until the onion is soft.
- Add in the diced tomatoes, tomato sauce, broth, oregano, basil, salt and pepper, and heavy cream and give it a really good stir. Bring to a low simmer for 20 minutes covered. Stir frequently.
- Add in the tortellini and cook an additional 12 – 14 minutes, or until the tortellini is completely cooked. Once finished stir in parmesan cheese.
- Serve hot and top with extra parmesan cheese.

The entire family loved this sou, men included. I’ve just bought a bunch of tortellini to make a large portion to freeze for the winter. Soooo delicious!
This was amazing! Everyone in the family loved it!! So easy too. My husband ‘needs’ meat at every meal to next time i may add some shredded chicken!
