One-Pot Tortellini Tomato Soup

1 white onion, diced
1 tbs minced garlic
1 tsp olive oil
1/2 tsp dry rosemary
28 oz diced tomatoes
15 oz tomato sauce
1/2 tsp dried oregano
1/2 tsp dry basil
1/2 tsp salt
1/4 tsp pepper
4 cups chicken broth
1/2 cup heavy cream
20 oz frozen three cheese tortellini
1/2 cup shredded parmesan cheese, plus more for topping
Directions
- In a large pot over medium heat, pour the olive oil once the oil is hot add in the onion, garlic and rosemary. Saute for 5 minutes or until the onion is soft.
- Add in the diced tomatoes, tomato sauce, broth, oregano, basil, salt and pepper, and heavy cream and give it a really good stir. Bring to a low simmer for 20 minutes covered. Stir frequently.
- Add in the tortellini and cook an additional 12 – 14 minutes, or until the tortellini is completely cooked. Once finished stir in parmesan cheese.
- Serve hot and top with extra parmesan cheese.
