Pepperoni Mozzarella Pasta Salad

Pepperoni Mozzarella Pasta Salad brings all the flavors of pizza into a chilled pasta dish, loaded with pepperoni, mozzarella, and fresh veggies in a tangy dressing.

Ingredients 

  • 10 oz rotini pasta
  • 2 cups cherry tomatoes, sliced
  • 8 oz mozzarella cheese, cut into cubes
  • ½ lb pepperoni, cut into triangles

Dressing:

  • 3 tbs olive oil
  • 3 tbs balsamic vinegar
  • ½ tsp salt
  • 1 tsp Italian seasoning

Instructions 

  • Make the dressing: To a small bowl add all of the dressing ingredients and whisk well set to the side.
  • To a large pot of boiling water add the pasta and cook according to the package instructions. Once tender drain and rinse well with cold water to cool the pasta down completely. Place pasta into a large bowl and add in the tomatoes, cheese, pepperoni, and dressing stir well. Enjoy! Store in the fridge.
