- 2 cups shredded Colby Jack cheese

- Add onion, carrots, and celery and cook 5–7 minutes until softened.
- Stir in garlic and cook until fragrant.
- Sprinkle flour over mixture and cook 1–2 minutes.

- Gradually add broth and cream, then add potatoes.
