How to Make Sausage Potato Soup

Step 1: Cook the sausage in a large pot over medium heat, breaking it up slightly.

Ingredients 

  • 1 lb Italian sausage
  • 1 yellow onion, diced
  • 2 large carrots, sliced
  • 2 ribs celery, sliced
  • 1 tbsp minced garlic
  • 3 tbsp all-purpose flour
  • 2 tsp soy sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp dried oregano
  • 6 cups chicken broth
  • 1 cup heavy cream
  • lbs red potatoes, cut into bite-size pieces
  • 2 cups shredded Colby Jack cheese

Instructions 

  • Cook sausage in a large pot over medium heat for about 3 minutes, breaking it up.
  • Add onion, carrots, and celery and cook 5–7 minutes until softened.
  • Stir in garlic and cook until fragrant.
  • Sprinkle flour over mixture and cook 1–2 minutes.
  • Stir in soy sauce, salt, pepper, Italian seasoning, and oregano.
  • Gradually add broth and cream, then add potatoes.
  • Simmer 15–20 minutes until potatoes are tender.
  • Reduce heat and stir in cheese until melted and smooth.
