Sausage Tortellini Soup – Slow Cooker

Cheesy tortellini, savory sausage, and a rich tomato broth slow-cooked to cozy perfection. Just dump, stir, and let it simmer!

Ingredients 

  • 1 lb Italian sausage
  • 28 oz can crushed tomatoes
  • 14 oz can diced tomatoes
  • 4 cups chicken broth
  • 3 large carrots, chopped
  • 3 celery sticks, chopped
  • ½ medium white onion, chopped
  • Dash salt and pepper
  • 4 cups spinach
  • 9 oz packet cheese tortellini, refrigerated
  • ¾ cup heavy cream

Instructions 

  • On the stove, cook the sausage with onion for about 7 – 9 minutes or until the sausage is fully cooked. Remove any excess grease. Add to the slow cooker. Add in all the remaining ingredients EXCEPT heavy cream, tortellini and spinach (keep cold for later).
  • Cook on LOW for 7-8 hours or on HIGH for 4-5 hours.
  • 20 minutes before serving add in the heavy cream, tortellini and spinach and set crockpot to high heat, cook for 20 minutes. Stir lightly.
  • Serve hot and enjoy!

    Made this tonight. It was delicious as well as quick and easy. I left out the heavy cream and added a little basil and oregeno. Everything else I did just as the receipe read. My husband and I loved this meal. It is now in my favorite recipes book.

    Found this recipe on YouTube and followed your links to see the steps and ingredient list. This was… so good! My wife and I thoroughly enjoyed the flavor and consistency. I followed the recipe exactly (+1 extra Carrot) and used my Instant Pot on Slow Cooker mode on High for about 5 hrs 20 mins (including 20 mins after adding the final 3 ingredients). This will absolutely be in rotation for us.
