1 lb golden or red potatoes, cubed
3 tbs olive oil
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1 lb smoked chicken sausage, sliced into disks
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 white onion, sliced
- Preheat oven to 400 F.
- Place the potatoes on the sheet pan and drizzle with 1 tbs olive oil and sprinkle with 1/2 tsp garlic powder and a dash of salt and pepper. Rub the potatoes into the oil well. Bake for 15 minutes.
- Push the potatoes to one side of the sheet pan and add the sausage to the center of the pan, drizzle with 1 tbs olive oil, rub the oil over the sausage. On the other side of the sheet pan add the bell peppers and onions sprinkle with 1/2 tsp garlic powder and a dash of salt and pepper. Bake for 20-25 minutes or until the sausage is golden brown. (Give everything a good stir half way through baking.
