Sausage and Vegetables Sheet Pan

Sausage & vegetables sheet pan is a quick and colorful dinner made with smoky sausage and roasted veggies—all on one tray.

Ingredients 

  • 1 lb golden or red potatoes, cut into small pieces
  • 3 tbs olive oil
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp Italian seasoning
  • 14 oz smoked sausage, sliced
  • 1 green bell pepper, sliced
  • 1 zucchini, cubed
  • 1 white onion, sliced

Instructions 

  • Preheat oven to 400 F. Line a large sheet pan with parchment paper or foil
  • Place all of the ingredients into a large bowl and stir to coat the sausage and vegetables in the oil and seasonings.
  • Bake for 25 minutes or until the potatoes are tender and sausage is golden. Enjoy.
