Sheet Pan Pesto Chicken

Ingredients

  • 1 lb chicken breasts

  • 1 1/2 lb red potatoes, quartered

  • 1 lb green beans

  • 1 cup cherry tomatoes

  • 2 tbs olive oil

  • 1/2 cup basil pesto

  • 1/2 tsp salt

  • 1/4 tsp pepper

Directions

  • Preheat oven to 400 degrees.
  • Spray a sheet pan with non-stick spray.
  • Slice the chicken in half horizontally so its thinner. Place the chicken with the rest of the ingredients into a large bowl stir to coat. Place on the sheet pan, spread it out evenly.
  • Bake for 25 minutes or until the chicken is cooked and the potatoes are fork tender. Enjoy!
