Spaghetti with Yellow Squash

Spaghetti with yellow squash is a fresh twist on pasta night—simple, light, and full of seasonal goodness.

Ingredients 

  • 1 tbs olive oil
  • 1 medium sized yellow squash, cut into half moons
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp Italian seasoning
  • 1/2-1 lb spaghetti noodles
  • 24 oz pasta sauce

Instructions 

  • Bing a large pot of water to a boil add the pasta in and cook according to the package instructions, drain and set to the side.
  • To a large saute pan on the stove over medium heat add the oil, once hot add in the squash cook for 3-5 minutes flipping often. Add in the seasonings and pasta sauce stir well and let simmer for 5 more minutes stirring occasionally.
  • Serve over the cooked pasta and enjoy.
