Ingredients

  • 4 tbs canola oil
  • 10 corn tortillas
  • 1 can refried beans

Toppings (optional)

  • Sliced cherry tomatoes
  • Shredded lettuce
  • Shredded sharp cheddar cheese
  • Sour cream
  • Lime
  • Cilantro

Instructions

  • To a pan over medium heat add the oil once the oil is hot add the corn tortillas, cook for 1-3 minutes on each side until they are golden brown. Don’t overcrowd the pan, I like to do this in batches
  • While the tortillas are cooking add the refried beans to a pan and warm them up
  • To assemble I like to add a scoop of the beans, tomatoes, cheese, lettuce, sour cream and cilantro! But make it your own and add any toppings you enjoy!
