Grocery List

Meat & Protein:

Ground Beef

  • 7.5 lbs ground beef total
  • 5 lbs for batch cooking
  • 2.5 lbs for the meatloaf

Chicken

  • 2 chilled rotisserie chickens

Use the shredded chicken for the Burrito Bowls, BBQ Chicken Sandwiches, and BBQ Chicken Pizza.

Eggs

  • 4 large eggs

Dairy:

Cheese

  • About 2 lbs shredded mozzarella cheese
  • 1 lb shredded cheddar cheese

The mozzarella is for the pizzas and Baked Ziti. The cheddar is for the Taco Rice Casserole and Beef Bean Rice Burritos.

Milk

  • Small container of milk for the meatloaf

  • 4 cups uncooked white rice, about a 2 lb bag

Pasta

  • 1 lb ziti pasta

Tortillas

  • 1 package large burrito-size flour tortillas, at least 8 tortillas

Hamburger Buns

  • 1 package hamburger buns

Homemade Pizza Ingredients:

  • 1 (5 lb) bag all-purpose flour
  • 2 tbsp active dry yeast, about 3 packets
  • 3 tbsp honey
  • Olive oil
  • 1 large jar pizza sauce
  • 1 package pepperoni
  • Mozzarella cheese, included above
  • BBQ sauce, included below
  • Rotisserie chicken, included above
  • Red onion, included below
  • Frozen peppers and onions, included below
  • Garlic powder
  • Italian seasoning

  • 2 cans pinto beans

You need at least 2 cups for the Burrito Bowls, plus some for one of the pizzas.

  • 1 large bottle BBQ sauce, about 28 oz
  • 1 bottle ketchup
  • 1 bottle Worcestershire sauce

The 16 oz salsa jar should cover the approximately 1 5/6 cups needed across the casserole, burrito bowls, and burritos.

Seasonings:

  • Taco seasoning, about 7 tbsp total or 4 packets
  • Italian seasoning
  • Garlic powder
  • Salt
  • Black pepper

Meatloaf Ingredients:

  • 1 box stuffing mix
  • 4 eggs, included above
  • Milk, included above

The Main Grocery Stretch

A big reason this freezer prep stays affordable is that you’re buying a relatively small group of ingredients in larger quantities and turning them into completely different meals. The ground beef, rice, rotisserie chicken, beans, cheese, onions, salsa, and tortillas all get reused without making every dinner feel the same.

Start By Batch Prepping

Before assembling the individual freezer dinners, I cooked a large batch of white rice and ground beef. Doing these two things first made several of the recipes much faster to put together.

Batch-Cooked White Rice

Ingredients

  • 4 cups uncooked white rice
  • Water, according to your cooking method

Instructions

  1. Rinse the rice well.
  2. Cook the rice in an Instant Pot or in a large pot on the stove according to the package or appliance instructions.
  3. Once cooked, fluff the rice and let it cool completely before using it in the freezer meals.

Batch-Cooked Ground Beef

Ingredients

  • 5 lbs ground beef
  • 1 cup water

Instructions

  1. Add the ground beef and water to the Instant Pot.
  2. Cook on high pressure for 30 minutes, or until the beef is completely cooked through.
  3. Carefully remove any excess grease.
  4. Break the ground beef into crumbles.
  5. Let it cool completely before using it to assemble the freezer meals.

Cooking the rice and ground beef in bulk saves a surprising amount of time. It also gives you inexpensive building blocks that can turn into casseroles, burritos, bowls, and plenty of other dinners.

Freezer Meal Prep Tips

  • Label Every Meal Before Freezing. Write:
    • Meal name
    • Date
    • Cooking instructions
    • Any ingredients to add later
    • Serving suggestions
  • Freeze Only After Ingredients Have Cooled. Allow cooked meat, rice, pasta, and chicken to cool completely before assembling.
  • Keep Similar Meals Together. I like grouping freezer meals by cooking method. Keep the slow cooker bags together, casseroles stacked together, and burritos in one section so it is easy to grab what you need.
  • Use What Your Family Actually Eats. The best freezer meals are the ones your family will actually use. If your family likes tacos, rice bowls, pasta bakes, and breakfast burritos, start there first.

1. Homemade Freezer Pizzas

Homemade freezer pizzas are one of my favorite things to have ready because pizza night can get expensive fast. This batch makes four pizzas, and you can change the toppings so they do not all feel the same.

I made cheese, pepperoni, barbecue chicken, and pepperoni with peppers and onions.

2. Taco Rice Casserole

This Taco Rice Casserole uses some of the ground beef and rice we already batch cooked, then turns them into an easy cheesy dinner loaded with beans, corn, tomatoes, and taco flavor.

Ingredients

  • 2 1/2 cups cooked ground beef
  • 2 1/2 cups cooked white rice
  • 2 tbsp taco seasoning
  • 1 can pinto beans, drained
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can Rotel
  • 1/3 cup diced onion
  • 1/3 cup salsa
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Add the cooked ground beef, cooked rice, and taco seasoning to a 9×13-inch baking dish.
  2. Stir until the beef and rice are evenly coated in the seasoning.
  3. Add the pinto beans, black beans, corn, Rotel, diced onion, salsa, and shredded cheddar cheese.
  4. Stir everything together until well combined.
  5. Cover the baking dish tightly and freeze.
  6. When ready to make dinner, bake covered from frozen at 350°F for 45 to 60 minutes, or until completely heated through.

If taco-style dinners disappear quickly at your house too, Chicken Taco Rice, Mexican Beef and Rice Skillet, and Fajita Bowls over Taco Rice are good ones to save for another week.

3. Simple Meatloaf

I made two meatloaves during this freezer prep, which gives me two separate family dinners without having to make the recipe twice.

This is also one freezer meal I prefer to thaw in the refrigerator before baking instead of cooking it directly from frozen. It helps the center cook more evenly.

Mashed potatoes are always an easy choice with meatloaf, but Easy One Hour Dinner Rolls or Easy Baked Potatoes would work well too.

4. Baked Ziti

Baked ziti is one of my favorite freezer meals because it is inexpensive, filling, kid-friendly, and reheats really well. This one uses only a handful of simple ingredients.

Ingredients

  • 1 lb ziti pasta, cooked
  • 1 lb ground beef, cooked
  • 24 oz pasta sauce
  • 1/2 cup diced onion
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Add the cooked ziti to a 9×13-inch baking dish.
  2. Add the cooked ground beef, pasta sauce, and diced onion.
  3. Stir until the pasta and beef are evenly coated in the sauce.
  4. Sprinkle the mozzarella cheese evenly over the top.
  5. Cover tightly with foil and freeze.
  6. When ready to serve, bake covered from frozen at 350°F for 45 to 60 minutes, or until completely heated through.

Serve this with Cheesy Garlic Bread (with Crescent Dough) or Mozzarella-Stuffed Garlic Breadsticks and dinner is basically done.

5. Freezer Burrito Bowls

These freezer burrito bowls are one of my favorite ways to use batch-cooked rice and rotisserie chicken. They work for an easy dinner, but they are also really convenient for lunches.

Ingredients

  • 3 to 4 cups cooked white rice
  • 2 to 3 cups cooked rotisserie chicken
  • 1 can corn, drained
  • 1 can pinto beans, drained
  • 2 cups fajita vegetables
  • 2 tbsp taco seasoning
  • 1/2 cup salsa

Instructions

  1. Add the cooked rice and rotisserie chicken to a large bowl.
  2. Add the corn, pinto beans, fajita vegetables, taco seasoning, and salsa.
  3. Stir until everything is well combined and the rice is coated in the seasoning and salsa.
  4. Divide the mixture between freezer-safe individual containers.
  5. Cover and freeze.
  6. When ready to eat, remove the lid and microwave until completely heated through.
  7. Add your favorite toppings such as cheese, sour cream, avocado, or extra salsa before serving.

For another inexpensive dinner built around rice, One-Pot Teriyaki Chicken and Rice, Italian Chicken and Rice, and Hawaiian Chicken and Coconut Rice are all worth adding to your meal plan.

6. BBQ Chicken Sandwiches

This freezer BBQ chicken could not be much simpler. I like freezing it in a loaf pan because it takes up very little freezer space.

Ingredients

  • 3 to 5 cups cooked rotisserie chicken
  • 1/3 cup diced red onion
  • 1 to 1 1/2 cups barbecue sauce

Instructions

  1. Add the cooked rotisserie chicken to a loaf pan.
  2. Add the red onion and barbecue sauce.
  3. Stir until the chicken is evenly coated.
  4. Cover tightly and freeze.
  5. When ready to serve, transfer the chicken to a microwave-safe dish and microwave until heated through, or reheat it in a saucepan on the stove.
  6. Serve on hamburger buns.

7. Beef, Bean, and Rice Burritos

Homemade freezer burritos are so convenient to have around. I especially like making them myself because I can load them with plenty of beef and beans instead of ending up with a burrito that is mostly tortilla and rice.

Ingredients

  • 2 1/2 cups cooked ground beef
  • 2 cups cooked white rice
  • 1 large can pinto beans
  • 1 cup salsa
  • 1/2 cup diced yellow onion
  • 3 tbsp taco seasoning
  • Large burrito-size flour tortillas
  • Shredded cheese

Instructions

  1. Add the cooked ground beef and rice to a large bowl.
  2. Add the pinto beans, salsa, diced onion, and taco seasoning.
  3. Stir until the filling is well combined.
  4. Spoon the mixture into large burrito-size tortillas.
  5. Sprinkle shredded cheese over the filling.
  6. Roll each tortilla tightly into a burrito.
  7. Wrap the burritos for freezing.
  8. Freeze until needed.
  9. When ready to eat, place a burrito on a microwave-safe plate and microwave from frozen until the center is completely hot.

This recipe makes around 8 large burritos, so it is especially helpful for stocking the freezer with quick individual meals.
