Instructions

  1. Bring a pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  2. In a large pan, cook the sausage over medium heat, breaking it into small pieces. Drain excess grease.
  3. Reduce heat and add cream cheese, diced tomatoes, and heavy cream. Stir until smooth.
  4. Stir in spinach and cook until wilted. Add Parmesan and mix until melted.
  5. Add the cooked pasta and toss until everything is coated.
  6. Serve warm with extra Parmesan if desired.

If you want to round this out, a quick side like Easy One Hour Dinner Rolls or Cheesy Garlic Bread (with Crescent Dough) works perfectly.

2. Sausage, Veggies, and Gravy Bake

This is a true “throw it in the oven and let it cook” kind of dinner.

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 1 lb baby potatoes
  • 2 cups sliced carrots
  • 6 sausages
  • ½ tsp salt
  • 1 tbsp olive oil
  • 1½ cups water
  • 1 packet au jus gravy mix

Instructions

  1. Preheat oven to 400°F.
  2. In a baking dish, combine onion, potatoes, and carrots. Toss with olive oil and salt.
  3. Place sausages on top.
  4. Whisk together water, gravy mix, and olive oil.
  5. Pour over everything.
  6. Cover with foil and bake for 45 minutes until potatoes are tender.
  7. Serve with the gravy spooned over the top.

This is filling on its own, but adding something simple like homemade naan bread or a small antipasto side salad makes it stretch even further.
