If you are looking for an easy dinner recipe that you can make without meat, yet have a complete meal with protein, these tasty cheesy burritos with tasty homemade avocado salsa are a great option and super simple to meal prep for the week. 

This easy black bean burritos recipe is also a great way to keep within your budget because it is a great recipe, but still a cheap meal to make for the family. It would be perfect for a meatless Monday meal!

Plus, who doesn’t love good black bean and cheese burritos?! Especially when you aren’t in the mood to cook or even go out for dinner easy meals are what you need. So when make sure to grab a can of black beans in your next shopping trip so you can make these simple black bean burritos.

Ingredients for Black Bean Burritos

Vegetarian Black Bean Burritos ingredients:

  • Beans: use canned black beans, drained and rinsed
  • Seasoning: pick up a packet of your favorite taco seasoning or use homemade taco seasoning
  • Tomatoes: a can of Rotel or tomatoes with green chilies, drained
  • Cheese: I like to use shredded cheddar cheese but you can also use Mexican blend cheese too
  • Tortillas: I use medium sized tortillas but you can use the bigger size if you prefer

Avocado salsa:

  • Avocados: ripe and a little soft avocados
  • Onion: cut up a red onion or your favorite
  • Lime: fresh lime from the produce sections
  • Salt: either kosher salt or sea salt will work
  • Garlic: I use minced garlic from the can to keep it simple
  • Salsa: pick your family’s favorite salsa or fresh pico de gallo

How to make Black Bean Burritos

Prepare black bean mixture:

  • To a medium sized bowl add the drained and rinsed black beans and mash with the back of a fork or potato masher.
  • Stir in the taco seasoning, drained can of rotel, and cheese. Set to the side

Make the Avocado Salsa:

  • To a medium sized bowl add in the avocados, diced onion, juice from the lime, minced garlic, and salsa mash with the back of a fork until well combined.
  • Fill the center of the burrito with the black bean mixture and avocado salsa roll the tortilla and enjoy

How to store leftover vegetarian burritos:

Fridge: Place any of the leftover black bean mixture and avocado salsa into separate airtight container and store them in the fridge for up to 3 days.  

Counter: Keep the tortillas either on the counter or in the pantry until you are ready to build your burritos the next day.

Any time I think of burritos I always think of making rice. The beauty of it is that you can make so many different types. Here are a few of my favorites to serve with this burrito recipe. 

  1. Cilantro-lime rice
  2. Spanish rice
  3. Brown rice
  4. Plain white rice (I like to use jasmine rice)

You can so serve some refried beans or more salsa and chips for great sides as well!

  • 1 tbsp Taco seasoning

  • 1/2 cup Cheddar cheese, shredded

  • 4-6 Medium tortillas

  • Avocado salsa ingredients
  • 2 Avocados

  • 1 Red onion, diced

  • 1 Lime

  • 1 tsp Salt

  • 1 tbsp Minced garlic

  • 1/4 cup Salsa (your favorite tomato salsa)
