Coconut Curry

Rich, creamy, and packed with bold spices—this Coconut Curry is a one-pot wonder that’s as comforting as it is crave-worthy. Perfect with rice, noodles, or scooped up with warm naan!

Ingredients 

  • 2 Tbs olive oil
  • 1 white onion, diced
  • 1 LB chicken breast , cut into cubes
  • 3 tsp minced garlic
  • 1 tbs minced ginger
  • 2 tsp ground coriander
  • 2 tsp curry powder
  • 3 tbs red curry paste
  • 2 Tbs lime juice, optional
  • 1 Red bell pepper , sliced
  • 1 can full fat coconut milk
  • 1 Tbs brown sugar
  • cilantro, optional topping

Instructions 

  • Heat oil in a pan then add the onion, sauté for 3-5 minutes.
  • Add the garlic, ginger, coriander, curry powder, and red curry paste stir frequently for 2-3 minutes.
  • If needed add and additional tbs of olive oil then add the chicken into the pan cook chicken for about 4 minutes or until the chicken is about 80% of the way cooked.
  • Dump the brown sugar, coconut milk, and lime juice in.
  • Stir frequently and simmer until the sauce has thickened and the chicken is completely cooked.
  • Serve with rice and top with cilantro!

    Oh my! I have never had curry in my life but figured if u made it then I would give it a whirl…. So glad I did!! Another hit in my books. I noticed the peppers weren’t in the directions but I watched the videos when I cook so I saw to put them at the end but you may want to edit that.

    This so simple but very tasty! I’m 73 and have health problems that are making it hard to be on my feet for very long. I can sit down to do the chopping, & the cooking is very fast. I don’t like spicy hot foods, & the heat level on this is fine. Thank you for this tasty recipe.

    This turned out absolutely delicious! I couldn’t find curry paste at my store so I just subbed additional curry powder and it worked great. I noticed that you may have forgotten to include when to add the red pepper in the written recipe. Thanks for helping me feed my family!
