Sweet Potato Chicken Dinner is one of those super simple one-pan meals that is a high-protein dinner recipe made with simple ingredients, yet it is bursting with tons of flavor.

This is a delicious dinner that my whole family enjoys and asks for seconds of their sweet potato bowls. 

I love that I can make this complete meal in one large skillet, which is an easy recipe to make, but is still a healthy meal.

​I know that healthier recipes aren’t always what you want to eat on those busy weeknights, but this sweet potato recipe will be a one-pot meal you will enjoy any time of the week.

What I love most about this recipe is that you can make everything in one large pot, add in a little bit of seasonings and lots of pantry staples, and you have an amazing meal that is hearty and healthy.

Ingredients for Sweet Potato Chicken Dinner:

  • Potatoes: You will need to get fresh large sweet potatoes, peel them, and dice them into small, bite-sized pieces
  • Onion: I normally have yellow onion on hand so that is what I diced and used for this recipe
  • Oil: Use whatever olive oil or avocado oil you have on hand
  • Broth: The cooking liquid I use in this recipe is chicken broth, but vegetable broth would work
  • Seasoning: A combination of minced garlic, ground black pepper, kosher salt, paprika,  onion powder, garlic powder, and Italian seasoning
  • Tomatoes: I like to keep it simple and use a can of fire roasted diced tomatoes for added flavor
  • Chicken: Canned chicken works well in this recipe, just be sure to drain in before adding
  • Greens: I like to sneak in some fresh vegetables like fresh spinach that has been chopped
  • Cheese: Shredded Parmesan cheese works great in this sweet potato recipe

How to Make this Sweet Potato Chicken Dinner:

Cook sweet potato mixture:

  • To a large pan on the stove over medium heat, add the olive oil. 
  • Once the oil is hot, add the sweet potato, onion, and 1/2 cup of the chicken broth to the pan. 
  • Stir and cover with a lid. Let cook for 8 to 10 minutes, stirring occasionally with a spatula to soften the sweet potatoes.

Add seasoning and additional ingredients:

  • Stir in the minced garlic until fragrant.
  • Stir in the diced tomatoes, remaining broth, canned chicken, spinach, seasonings, stir everything together, and let cook for five minutes altogether.

​Add cheese:

  • Finally, add in the Parmesan cheese, let it melt for a minute, then serve and enjoy.

Ingredients 

  • 2 large sweet potatoes, diced small
  • 1 large yellow onion, diced
  • 2 tbsp olive oil
  • 1/2 + 1/3 cup chicken broth, divided
  • 1 tbsp minced garlic
  • 14 oz can fire roasted diced tomatoes
  • 12 oz can chicken, drained
  • 2 cups fresh spinach, chopped
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 cup Parmesan cheese

Chicken to use:

Honestly, I really enjoy using canned chicken in this recipe because not only does it keep this recipe simple, but it is also one less thing I have to cook ahead of time. 

However, if you want, you can also use shredded chicken from a store-bought rotisserie chicken or any other leftover chicken.

Can I use sweet potato cubes?

 There is another way to make this recipe even easier. In the produce section of the grocery store there are precut and peeled sweet potato cubes that you can use in this recipe. 

Frozen sweet potato cubes can also work as well!

Toppings for sweet potato bowls:

  • Black beans
  • Sour cream or plain Greek yogurt
  • Chopped green onions
  • Fresh cilantro
