Ingredients for Low Carb Turkey Veggie Skillet:

  • Fresh vegetables: I like to use diced yellow onion, sliced zucchinis, fresh green beans that have been trimmed and cut into bite-sized pieces
  • Oil: Often, I will use olive oil that I have, but avocado oil will work too
  • Ground meat: Depending on what I have on hand, I will use either ground turkey or ground beef
  • Seasoning: Use a combination of minced garlic, kosher salt, ground black pepper, Italian seasoning, dried oregano, and paprika
  • Tomatoes: Add easy flavor with a can of fire-roasted diced tomatoes
  • Cooking Liquid: Incorporating chicken broth is a great way to add simple flavor and keep the lean ground turkey juicy
  • Cheese: Sprinkle shredded mozzarella cheese for the best topping to this healthy dinner recipe

How to Make this Low Carb Turkey Veggie Skillet:

​Brown ground turkey:

  1. To a large skillet over medium heat add the oil. 
  2. Once hot, add in the diced onion and turkey. Break the turkey up with a spatula and cook it through.

Add seasonings to ground meat:

  1. Once the turkey is cooked, add in the minced garlic and seasonings. Stir well.

Simmer with remaining ingredients:

  1. Turn the heat to low and add in the diced tomatoes, green beans, zucchini, and chicken broth. 
  2. Stir well and let simmer for about 10-15 minutes, stirring occasionally, until the vegetables are tender.

​Top skillet dinner:

  1. Sprinkle the cheese on top, then cover with a lid until the cheese is melted. Enjoy!

Ingredients 

  • 1 yellow onion, diced
  • 2 medium zucchinis, sliced
  • 1 lb fresh green beans, trimmed and cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 lb ground turkey or ground beef
