Ingredients for Peanut Butter Oatmeal Cups:

Peanut Butter: use your favorite brand of creamy peanut butter that you have on hand
Syrup: use pure maple syrup that you already have or grab it from the breakfast aisle in the grocery store for a delicious way to sweeten these no bake peanut butter oat cups
Oat: for the best results, use old fashioned oats
Optional chocolate topping: use either semi-sweet chocolate chips or dark chocolate chips with virgin coconut oil

How to make Peanut Butter Oatmeal Cups:

Prepare the dish: Line an 8×8 baking dish with parchment paper.

Make the peanut butter mixture: In a large microwave-safe bowl, add peanut butter and maple syrup. Microwave in 20-second increments, whisking after each time until smooth.

Add oats: Stir in the oats and mix to coat the oats in the peanut butter mixture.

Press into dish: Press the oat mixture into the prepared baking dish and freeze for 10 minutes.

Optional chocolate topping:

  • In a separate bowl, combine chocolate chips and coconut oil.
  • Microwave in 30-second intervals, stirring after each time until the mixture is smooth.
  • Drizzle the melted chocolate over the chilled oat mixture.

Chill: Place the dish in the fridge and chill for 20 more minutes.

Slice and serve: Once chilled, slice into pieces and store in the fridge.

Fridge: Put the remaining oatmeal cups into an airtight container and store them at room temperature for up to 4 days or 7 days in the refrigerator.

Peanut butter to use:

Use whatever peanut butter you have on hand. Creamy peanut butter, natural peanut butter, or even crunchy peanut butter if you want a little extra crunch in these no bake treats. 

If you want to use a nut butter like almond butter, cashew butter, or sunflower butter in place of the peanut butter you can!

Topping for peanut butter cups:

You can really make this no bake snack your own by adding toppings. Here are a few suggestions:

  • Jelly on top to make peanut butter and jelly oatmeal cups
  • Pinch of flaky sea salt if you use the chocolate over the peanut butter layer
  • Mini m&m’s 
  • Chopped nuts

Oats to use:

I love using the old fashioned oats with this recipe because they hold their shape and mix well with peanut butter mixture, but if you only have quick-cooking oats on hand, they can work as well.

​Make mini oatmeal cups:

Instead of using a baking dish, use a mini muffin tin with paper liners and press a little bit of the oat mixture into the bottom of the liner and then follow the rest of the recipe as written.
