Enjoy an easy dinner recipe with this Sheet Pan BBQ Chicken with Corn and Potato Wedges that is made all on a baking sheet for a delicious meal made with ingredients from your pantry.

What I love about sheet pan dinners is that you can make an entire meal on one pan in the oven and still get perfectly juicy chicken. 

This delicious dinner is one of my family’s favorites to make during the busy weeknights the everyone will enjoy. 

Just pick your favorite barbecue sauce and fresh veggies, and you are all ready to go for this chicken dinner recipe.

Ingredients for Sheet Pan BBQ Chicken with Corn and Potato Wedges:

  • Potatoes: for the best results, use golden potatoes (or red potatoes) that have been washed and cut into wedges
  • Corn: get fresh corn on the cob and cut it into halves
  • Oil: crisp up these veggies easily with a little olive oil or avocado
  • Seasoning: use salt and black pepper
  • Chicken: I like to use boneless chicken breast in this BBQ chicken sheet pan meal

BBQ Sauce Mixture

  • BBQ sauce: grab a jar of your favorite BBQ sauce
  • Honey: use whatever honey you have in your pantry
  • Juice: adding a little lime juice adds a perfectly fresh flavor

How to make Sheet Pan BBQ Chicken with Corn and Potato Wedges:

Preheat oven and prep pan:

Preheat oven to 375 degrees F. 

Line a sheet pan with aluminum foil or parchment paper.

Prepare vegetables:

Cut potatoes into small thin wedges place on the prepared sheet pan.

Place corn on sheet pan next to the potato wedges, drizzle corn and potatoes with olive oil, salt, and pepper rub the oil and seasoning into the potato wedges and corn.

Make BBQ sauce mixture:

Whisk the BBQ Sauce Mixture ingredients together in a small mixing bowl.

Season chicken and bake:

Place boneless skinless chicken breasts onto the sheet pan and brush well on both sides with the BBQ sauce mixture.

Bake in the preheated oven for 30-35 minutes or until the chicken is completely cooked through. Enjoy!

Fridge: Put the leftover chicken and vegetables into airtight containers and store it the fridge for up to 5 days for ultimate freshness and texture.

Tips and tricks for making BBQ Chicken in the oven:

Cuts of chicken to use:

For this recipe I enjoy using chicken breasts, but you could also use chicken thighs or chicken tenders if you prefer!

How to know when barbecue chicken is done:

Chicken is done when the juices that run off the chicken breast are clear and the meat thermometer reads 165 degrees F or more for the internal temperature. 

Be sure to use the thickest part of the chicken when using a thermometer to check doneness.

Add-in for the BBQ sauce:

  • Worcestershire sauce
  • Garlic powder
  • Onion powder
  • Ground mustard
  • Brown sugar

Ingredients 

  • 1.5 lbs golden potatoes, or red potatoes
  • 3-4 half pieces of corn on the cob
  • 3 tbs olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1-2 lbs chicken breast

BBQ Sauce Mixture

  • 1 cup barbecue sauce, any brand will work
  • 1 tbs honey
  • 1 tbs lime juice

Instructions

  • Preheat oven to 375 °F.
  • Line a sheet pan with aluminum foil or parchment paper.
