The best part about this baked eggs recipe is that you can totally customize this high-protein meal to suit your family. This prepared sheet pan recipe is a great way to get a creamy texture to eggs without overcooking the eggs and with minimal cleanup or prep work.

Key Ingredients:

  • Meat: I like to use breakfast sausage that has been cooked and crumbled, mixed with Canadian bacon or diced ham
  • Eggs: You will need to use whole eggs in the sheet pan
  • Milk: Use whatever milk you like to combine in your scrambled eggs, I like to use whole milk for fluffy eggs
  • Seasoning: Simple kosher salt and ground black pepper will work great

How to Make Sheet Pan Breakfast Sandwich Eggs:

Preheat oven:

  • Preheat oven to 325 degrees F. 

Prepare ingredients:

  • Cut the Canadian bacon into smaller pieces.
  • To a large bowl, combine eggs, milk, salt, and pepper. Whisk to combine the ingredients.

Prep sheet pan:

  • Generously grease your 12×16 rimmed sheet pan with non-stick spray. 
  • Pour egg mixture into the sheet pan. 
  • Evenly sprinkle the cooked crumbled sausage and Canadian bacon over the top of the egg mixture on the sheet pan.

Bake egg mixture:

  • Bake for 15-22 minutes or until the egg has set and no longer jiggles in the center. 
  • Use a circular cutter to create an egg patty that will fit on an English muffin or biscuit.
  • Enjoy in a breakfast sandwich!

    I cooked this in an enameled steel 9×13 pan and added chopped scallions, cherry tomatoes and jalapeños. I cut it into 12 squares and made sandwiches with all but 4 squares—ran out of English muffins! But this morning, i reheated a quare with some jack cheese and put it on some toast with guacamole. Delicious!! Super easy recipe and great to customize based on whatever veggies or chesse is on hand!
