Ingredients

  • 2-3 lb chuck roast, cut it into pieces and remove the large fatty pieces

  • 1 cup beef broth

  • 1 tbsp minced garlic

  • 1 tbsp minced ginger

  • 1/2 cup low sodium soy sauce

  • 1/3 cup brown sugar

  • 1 tbsp rice vinegar

  • 1/4 cup cornstarch

  • 12 oz frozen bag broccoli

Directions

  • Add the meat into the slow cooker
  • Make the sauce. To a small bowl add in the beef broth, minced garlic, minced ginger, soy sauce, brown sugar, and rice vinegar, whisk well. Pour the sauce over the meat in the slow cooker and stir. Cook on LOW for 5-6 hours.
  • 30 minutes before it’s cooked carefully remove 1/2 cup of the sauce in the slow cooker and add it into a small bowl. Add the cornstarch into the bowl and stir until smooth. Pour this mixture into the slow cooker. Add the broccoli into the slow cooker and stir. Cook for an additional 20 minutes or until the meat is tender and the sauce has thicken.
