Ingredients for Slow Cooker Beef and Broccoli:

  • Meat: I like to use a chuck roast, cut it into pieces and remove the large fatty pieces
  • Liquid: To enhance the flavor, I use beef broth but you could use chicken broth or water. You will also need low sodium soy sauce and rice vinegar.
  • Seasonings: Minced garlic and minced ginger
  • Sugar: Use brown sugar to add to the savory crock pot beef flavor profile.
  • Thickener: You will need to have cornstarch on hand to thicken the sauce
  • Veggies: Use a frozen bag broccoli to keep things simple

How to make Slow Cooker Beef and Broccoli:

Add the meat into the slow cooker.

Make the sauce. To a small mixing bowl, add in the beef broth, minced garlic, minced ginger, soy sauce, brown sugar, and rice vinegar. Whisk well. Pour the sauce over the meat in the slow cooker and stir. Cook on LOW for 5-6 hours.

30 minutes before it’s cooked, carefully remove 1/2 cup of the sauce in the slow cooker and add it into a small bowl. Add the cornstarch into the bowl and stir until smooth. Pour this mixture into the slow cooker. Add the broccoli to the slow cooker and stir. Cook for an additional 20 minutes or until the meat is tender and the sauce has thicken.

How to store this beef and broccoli dish:

Fridge: Place the leftovers of this delicious meal in an airtight container once it has cooled to room temperature in the slow cooker. Then store it in the fridge for up to 5 days.

I like to use a boneless beef chuck roast with this recipe, but you could also use a sirloin tip or sirloin roast.

Fresh or frozen broccoli:

You could use fresh broccoli, but the frozen broccoli works the best because it will take longer to cook, and will get less mushy during a longer cook in the slow cooker.

    This was easy and delicious! I made this for a large group and did double ingredients in 2 crockpots. Served over white rice with a little soy sauce.

    Only addition was adding some salt at the end.

    Huge hit with everyone!!
