Ground Beef Quesadillas

I love quesadillas, and so do my kids. But just plain tortilla and cheese doesn’t do it for me anymore. I like to pack my quesadillas with protein and lots of yummy ingredients to make an easy, tasty, and super satisfying meal.

These taco quesadillas have flavorful ground beef, refried beans, salsa, and some tortilla chips in the middle for a crunch wrap-like experience that is sooo delicious and yummy, and way healthier than anything that you’ll get at Taco Bell.

If you’ve ever made crunch wraps at home, you know they take forever to cook and they’re actually really hard to fold and I’m just not about that. These are a much easier version that taste pretty similar! You can even have your kids help you prepare them with you. It won’t be quite as fast, but it would be fun for them to spread the beans on the tortilla or sprinkle the cheese.

Taco Quesadilla Ingredients

Like I said, these are so simple. All you’ll need is:

  • Burrito Sized Tortillas
  • Canned Refried Beans
  • Ground Beef
  • Taco Seasoning
  • Mexican Blend Cheese
  • Salsa
  • Tortilla Chips
  • Butter

How to Make Quesadillas on the Stove

Some people make quesadillas in the oven, on a panini press, or even a waffle iron. Or have you seen those quesadilla makers that used to be popular in the 2000s? Usually, I see a few in the kitchen section at the thrift store, lol.

ANYWAY. The best way to make a quesadilla is on the stove in your favorite pan, with a bit of butter! The trick is to get the heat just right so that the outside of the tortilla gets golden and crispy, but the cheese melts as well. That will depend on what kind of range you have and what kind of pans you use. Play around and see what works best for your specific kitchen.

Taco Quesadillas

Taco quesadillas are a cheesy, crispy mashup of two favorites—loaded with seasoned taco meat, melty cheese, and all your favorite fixings in a golden tortilla.

Ingredients 

  • ¼ cup water
  • 1 large burrito size tortillas
  • 14 ounce canned refried beans
  • ½ lb ground beef
  • 2 tbs taco seasoning
  • 1 1/2-2 cups Mexican blend cheese
  • ¼ cup salsa, more if wanted
  • Tortilla chips
  • Butter

Instructions 

  • Cook ground beef in a large skillet and break it up into smaller pieces. Once cooked through, drain any grease from the pan and sprinkle in the taco seasoning and the water. Stir well and let simmer for 2 to 3 minutes
  • To a large burrito-size tortilla spread some of the refried beans to the bottom, dot some salsa on top of the beans, and sprinkle on some of the taco beef. Top with tortilla chips and cheese. Place a second tortilla on top. Repeat for all of the quesadillas.
  • Heat a clean skillet up on the stove. Add 1 tbsp of butter to the pan. Once, melted add in the quesadilla and cook for a couple minutes on each side until the cheese is melted and the tortilla is golden brown. Slice up and enjoy!
