BLT Pasta Salad

  • 5-6 strips of bacon

  • 8oz dry rotini pasta

  • 1/2 red onion, diced

  • 1 avocado, cut into small cubes

  • 5oz cheddar cheese, cut into small cubes

  • 1 1/2 cups cherry tomatoes, sliced

  • 3 cups romaine lettuce, thinly sliced

  • 3/4 cup ranch dressing


  • To a large pot of boiling water on the stove add the pasta and cook according to the box instructions. Drain and rinse with cold water to cool down.
  • To a skillet on the stove add the bacon and cook through. Remove to a plate lined with paper towel to absorb any grease. Crumble the bacon up in to bite sized pieces.
  • Add all of the ingredients into a large bowl. Stir well and enjoy now or refrigerate for later.
