  • Oil: Use the olive oil or avocado oil you have in your pantry
  • Chicken: Get fresh skinless chicken breasts and cut it into bite-sized cubes
  • Seasoning: A simple combination of Italian seasoning, kosher salt, black pepper, and minced garlic to season this creamy sauce perfectly
  • Tomatoes: You will need to get a jar of sun-dried tomatoes and chop them
  • Broccoli: I like to use frozen broccoli florets, but you can also use fresh broccoli and chop it into bite-sized pieces
  • Cooking liquid: To get the best taste and texture for this quick dinner recipe, use heavy cream and chicken broth or chicken stock
  • Cheese: I absolutely love this recipe topped with shredded Colby Jack cheese or parmesan cheese

How to Make this Creamy Chicken and Broccoli:

​Cook chicken:

  1. To a large skillet over medium heat, add the oil.
  2. Once the oil is hot, add the cubed chicken.
  3. Season the chicken with the Italian seasoning, salt, and pepper, stirring with a spatula to coat the chicken in the seasonings. 
  4. Cook chicken for 3-4 minutes on each side or until cooked through.

Add garlic and veggies:

  1. Once the chicken is cooked, stir in the minced garlic for 30 seconds or until fragrant.
  2. Now add in the chopped sun-dried tomatoes, chopped broccoli, chicken broth, and stir well. 

​Simmer ingredients:

  1. Let everything simmer for 3-5 minutes or until the broccoli is tender to your liking.

Add cream:

  1. Turn the heat to low and stir in heavy cream and cheese. 
  2. Once the cheese is melty, you are ready to enjoy!

We like to eat this over a bed of white rice, cauliflower rice, penne pasta, or egg noodles!

  • 2 tbs olive oil
  • 1 lb chicken breast, cubed
  • 2 tsp Italian seasoning

    I added a packet of Italian seasoning to the chicken, and increased the broth and cream by about 1/4 cup (I have a large family and wanted it saucy). Also added in fresh broccoli about halfway through cooking the chicken, because my store was out of frozen. I served this with gnocchi and my family loved it! I’ll absolutely make this again.
