  • Taquitos: you will need to use frozen taquitos about 20-25 for this recipe
  • Bean: use canned refried beans
  • Sauce: you will need to use a can of red enchilada sauce
  • Cheese: I like to use shredded Mexican-style cheese
  • Optional toppings for the end: guacamole, sour cream, salsa, shredded lettuce, lime, and more

How to make this easy dinner casserole recipe:

Preheat oven to 400°F.

Grease a 9×13 baking dish

Dump and Go Taquito Casserole


Spread the refried beans evenly on the bottom of the baking dish.

Place the frozen taquitos in a single layer over the refried beans.

Pour the enchilada sauce over the top.

Bake at 400°F for 25 minutes.

  • 19 oz can enchilada sauce
  • 2 cups shredded Mexican style cheese

    We tried this and it was so simple my son put it all together himself in no time. We used an 8×8 dish and a dozen beef and cheese taquitos, and scaled everything down to match. It was so yummy! We will definitely be making this one again.
