You can use this recipe with leftover ham that you don’t want to go to waste, especially if you love having a simple breakfast ready to eat in the morning or as a high-protein snack.
This is also a great way to serve a crowd for breakfast, with only a little bit of work, yet still super filling.
Why you’ll love this family favorite recipe!
I like to make these up at the beginning of the week for a quick meal for breakfast to grab and go. They are also great for bigger families to make on the weekend, since all you need are 3 main ingredients to keep this also a budget-friendly meal.

How to store a simple egg bites breakfast:
Fridge: Put the leftover egg bites into an airtight container or ziplock bag and store them in the fridge for 5-6 days or freezer for up to a month.
Tips and tricks for making ham and egg bites for breakfast:
Eggs:
I like to use the whole egg per muffin cup, but if you’d like, you can scramble the eggs to create an egg mixture to pour over the cheeses in the ham nests.
Toppings for egg bites:
Keep it simple with a little more salt, pepper, maybe some green onions or hot sauce, and you are ready to enjoy
More egg bite flavor options:
- Use deli turkey instead of ham.
- Use Canadian bacon instead of deli ham
- Add in some chopped bell peppers
- Chopped onions can add even more flavor
Make getting the egg bites out super simple:
If you want to make this super simple on your self to get the egg bites out of the muffin tin, use a silicone muffin pan, and then you can just pop them right out.

Julia. I made these last week and they were fabulous and went in a flash. We were all amazed that the egg still stayed soft even after being put in the fridge. Now the $24,000 question, can you freeze these please?

The hubs is always wanting breakfast… So, I’m trying this tomorrow. Thank you for all your great recipes.
Hi Julia!
Love your channel! How long do you usually reheat these throughout the week? I’m assuming you use the microwave?
Thanks for a great weekday time saver!
