Roasted Vegetables

Ingredients 

  • 1 large zucchini diced
  • ½ red onion diced
  • 3 large carrots diced
  • 1 large head broccoli chopped
  • 1 tbs minced garlic
  • 3 tbs olive oil
  • ½ tbs brown sugar
  • 1 tsp dried rosemary
  • ½ tsp dried sage
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions 

  • Preheat oven to 375 degrees F.
  • In a large bowl mix all of the ingredients together.
  • Line a sheet pan with parchment paper place the entire vegetable mixture on the sheet pan.
  • Bake for 35 minutes or until your vegetables are tender.

    Love love love!! This recipe was super delicious and very healthy. I had squash, zucchini, carrots and onion I didn’t have broccoli but I’m sure whatever vegetable you use will work great. Thanks for the recipe Julia!!
