Roasted Vegetables

Ingredients

  • 1 large zucchini diced

  • 1/2 red onion diced

  • 3 large carrots diced

  • 1 large head of broccoli chopped

  • 1 tbs minced garlic

  • 3 tbs olive oil

  • 1/2 tbs brown sugar

  • 1 tsp dried rosemary

  • 1/2 tsp dried sage

  • 1/2 tsp salt

  • 1/4 tsp black pepper

Directions

  • Preheat oven to 375 degrease
  • In a large bowl mix all of the ingredients together
  • Line a sheet pan with parchment paper place the entire vegetable mixture on the sheet pan
  • Bake for 35 minutes or until your vegetables are tender

    Love love love!! This recipe was super delicious and very healthy. I had squash, zucchini, carrots and onion I didnโ€™t have broccoli but Iโ€™m sure whatever vegetable you use will work great. Thanks for the recipe Julia!!
