One-Pan Chicken & Veggie Rice is one of those tasty, quick weeknight meals made with simple ingredients, precooked chicken, vegetables, and white rice to make a complete meal in one pan.

This is an easy one-pot chicken and rice recipe that the whole family can enjoy, with minal prep work to make it! Which makes it the best recipe to make for busy weeknights.

What I love about this recipe is that I can use any leftover chicken I might have from another recipe or buy a rotisserie chicken to cut down on the cooking time for this easy dinner recipe. Plus, of course, it’s also super delicious and filled with protein and vegetables.

Ingredients for One-Pan Chicken &Veggie Rice:

  • Rice: I like to use instant rice, such as Minute Rice, in this chicken meal
  • Broth: You can use either chicken broth or vegetable broth in this chicken recipe
  • Oil: I like to add olive oil to the skillet
  • Veggies: To keep it simple, I will use a bag of frozen mixed vegetables, but any vegetables will work
  • Onion: I normally get a bag of yellow onions when shopping, so I dice one up to add to this easy chicken recipe
  • Chicken: It is important to use cooked chicken, like canned, store-bought rotisserie chicken, or any type of bagged pre-cooked chicken for this one-pot meal
  • Seasoning: You will only need Italian seasoning, kosher salt, and ground black pepper

How to Make this One-Pan Chicken &Veggie Rice:

Cook the Rice

  1. Prepare the rice using chicken broth instead of water, following the instructions on the package in a large pot.

Sauté the Veggies

  1. While the rice cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and frozen vegetables.
  2. Sauté for 2-3 minutes, or until just tender.

Add the Chicken & Seasoning

  1. Stir in the cooked chicken, Italian seasoning, salt, and a dash of pepper.
  2. Cook for 4–5 minutes, uncovered, until everything is heated through.

Combine & Serve

  1. Add the cooked rice to the skillet and stir with a spatula to combine.
  2. Cook for another 1-2 minutes, then serve warm.

    • 2 tsp olive oil
    • 1 cup frozen mixed vegetables, any vegetables will work
    • 1 small yellow onion, diced
    • 12 oz cooked chicken, canned, rotisserie, or any type of bagged pre-cooked
    • 1 tsp Italian seasoning
    • ½ tsp salt
    • Dash of black pepper

    Instructions

    Fridge: Add any leftovers to an airtight container and then place the container in the refrigerator for 4-5 days.

    Chicken veggies and rice

    Chicken to use:

    I like to get the precooked chicken breasts for this recipe. If you have chicken already, you could cook up skinless chicken breast or juicy chicken thighs ahead of time, since the cooking process for this easy recipe doesn’t account for cooking the chicken all the way through.  

    Type of rice to use:

    When making this chicken dinner recipe, I use the parboiled type of rice, such as Minute Rice from the box. You can pick your favorite kind, whether you want white or brown rice.

    Do I need to use cooked rice?

    For this rice and chicken recipe, you do not need to cook the rice ahead of time, just the chicken. Just be sure to use a parboiled type of rice so it will cook through all the way.

    More vegetables to add:

    • Frozen bag of mixed vegetables 
    • Frozen broccoli
    • Chopped large carrots
    • Diced red onion instead of the yellow onion
    • Green beans
