Avocado Corn Salad

Creamy avocado, sweet corn, juicy tomatoes, and lime—this refreshing salad is summer in a bowl and pairs perfectly with any grilled dish.

Ingredients 

  • 4 ears corn
  • ¼ cup sliced fresh basil
  • ½ large large red onion , diced
  • 2 avocados, diced
  • 1 lime, juiced
  • ½ tsp salt
  • ¼ tsp pepper

Instructions 

  • On a cutting board cut the kernels off each of the ears of corn.
  • In a large bowl add all of the ingredients in stir everything together, chill for at least 1 hour. Enjoy!
