Slow Cooker Baked Russet Potatoes is one of those staple recipes I love to make during busy weeknights since they come out perfectly tender, and it is an easy way to make potatoes.

I love that I can make these slow cooker potatoes into whatever I want them to be.

Make them as a simple side dish or use them for a baked potato bar, and it only takes a few minutes of prep work to get it all set up. 

This is the best way to still get a fluffy baked potato with crispy skins without having to run your oven and make your whole kitchen hot, or if you are out of oven space.

I love making this recipe. It is super quick to throw together with only a handful of pantry ingredients, and the slow cooker does most of the heavy lifting. Then just add your favorite toppings. This is truly the easy method for making perfect baked potatoes.

Ingredients for Slow Cooker Baked Russet Potatoes:

  • Potatoes: For the best results, I like to use russet potatoes
  • Oil: I always have olive oil ready in my kitchen
  • Cooking liquid: You need to add water to cook the potatoes
  • Seasoning: Simple is great with only a bit of garlic salt

How to Make Slow Cooker Baked Russet Potatoes:

Prepare potatoes:

  1. Wash the potatoes thoroughly and pierce each one several times with a fork.

Add potatoes to slow cooker:

  1. Place the potatoes in a large slow cooker. (I like to use the slow cooker liners for even easier clean up!)
  2. Drizzle with olive oil and sprinkle evenly with garlic salt.
  3. Add the water to the bottom of the slow cooker.

Cook potatoes:

  1. Cover and cook on low for 6–8 hours, or until the potatoes are fork-tender.

Ingredients 

  • 7 small – medium russet potatoes
  • 1 tablespoon olive oil
  • cup water
  • ½ tablespoon garlic salt

Instructions

How to store this potato recipe:

Fridge: Place any leftover slow cooker potatoes into a large airtight container and store them in the fridge for up to 5 days.

Types of potatoes:

I like to use russet potatoes for this crock pot potatoes, but you could also use sweet potatoes or Idaho potatoes as well. 

Red potatoes or Yukon Golds would not be the best type of potato to use for this recipe. The potato skins will not crisp up the same.

How to know the potatoes are done:

The amount of time it takes to cooking potatoes in the slow cooker depends on the potato size. The easiest way to determine if the potatoes are done is if they are fork tender. 

This means the inside of the potatoes will have a fluffy texture, enough for the fork to easily press into the potato without resistance. 

The rule of thumb is that the bigger the potatoes are, the longer the cooking time will be.

Potato toppings are a great way to change up any potato dish to serve with an easy dinner recipe. 

Make a loaded potato or keep it simple, but here are a few suggestions:

  • Sour cream (or plain Greek yogurt) 
  • Chili (make your chili recipes, or if you have any leftover!)
  • Cheddar cheese
  • Green onion
  • Bacon bits
  • Nacho sauce
  • Ranch
  • Sloppy joe meat
  • Taco meat
