
Hawaiian Mac Salad
Ingredients
- 8 oz dry elbow macaroni noodles
- 1 large carrot, grated
- 3 tbs grated onion
- 1 tbs apple cider vinegar
Dressing:
- 1 ¼ cups mayonnaise
- 1 tsp sugar
- 2 tbs milk
- ¼ tsp pepper
- ½ tsp salt
Instructions
- To a large pot of boiling water on the stove add the pasta and cook according to the box instructions. Drain and rinse with cold water to cool down.
- Add pasta to a large bowl add the grated carrot, onion, and apple cider vinegar in the bowl. Stir well. Set to the side.
- To a small bowl add all of the dressing ingredients and whisk to combine. Add this dressing into the bowl with the pasta. Stir to combine the ingredients. Refrigerate for at least 2 hours. Enjoy!

Have made this twice for the family now, I make a double batch and we eat it all week! I add corn for a bit of extra veg!
